How can I eat 3,500 calories a day?

I've been following your Total Body Sculpting Plan started in April's issue. A large part of the plan is diet, but I've been struggling to eat 3,000 calories a day. I've now read I've got to increase that to 3,500! How am I supposed to manage that healthily? Could you give an example of a day's menu?

The editors of Men's Fitness reply: It may seem like a daunting task, but there is no way around it: if you want to bulk up you have to pack in the food. The trick to consuming lots of calories healthily is to plan carefully, keep eating at regular intervals and choose foods that provide plenty of carbs and protein for energy and muscle building, but don't pile on the fat as well.
